Birthday Eats! June 30, 2010

Yesterday was my birthday and Kala and I opted for dinner at the Triple Rock Social Club. The place is a bar owned and.operated by members of the band Dillinger Four. The place  serves up a lot of vegan friendly bar/comfort food, as well as having local and national bands play. Kala and I both opted for variations on the po’ boy sandwich. Mine was the Minneapolis po’boy, a mound of Gimme Lean and potatoes covered in vegan nacho sauce and Nayonaise. All this on a small bun, this is not a pick it up and eat it sammie. Kala had the BBQ-ed po’boy that was a smilar sized mound of mock duck and potatoes covered in a rich and spicy bbq sauce. Both were very tasty and very filling!

Mac and Cheese June 9, 2010

On a recent trip to our local vegan shop, Fast and Furless (love that place!) I picked up a package of Leahey Gardens Macaroni and Cheese.  I’d seen this stuff around and was curious, but hadn’t tried it since my experiences with packages of vegan mac and cheese have been less than awesome.  But I must say I’m pleasantly surprised with this stuff!  My only complaint is that it’s a bit bland on it’s own, but a bit of freshly ground pepper helped that situation a lot.  For less than $3 a package you get about three servings of quick food, so that’s always a nice thing to have in the pantry, especially in the summer.  It also comes in a gluten free variety and I wish they would make a whole wheat pasta variety since I’m not a huge fan of regular pasta.  All in all, I’d have this stuff again for sure!  Have any of you guys tried this stuff?



Perfect Summer Dinner June 2, 2010

My idea of a perfect Summer dinner changes all the time, but tonight it’s all about the tofu and veggie salad.  Really, any meal that doesn’t require a stove or oven is perfect when it’s hot outside 🙂  This salad is one my faves because it’s yummy and super easy to throw together for a fast and healthy dinner.  The recipe will be available soon in a zine that I’m working on, stay tuned for details!
