It’s really hard to find a healthy-ish muffin recipe that doesn’t taste all cardboardy and well, healthy. But this one from The Joy of Vegan Baking is awesome! They’re moist and sweet and actually filling which is nice. Of course, I made some changes to the recipe, I added cinnamon, vanilla, and some millet for a nice crunch. We were also short on the bran so it only has 1 cup instead of the 1 1/2 it calls for.
I also cut the recipe in half because we don’t have two muffin tins, although I guess I could have made some mini-muffins. But I’ll definitely be making these babies again!
