Thanksgiving November 30, 2008

I’ll say it right now, our Thanksgiving meal pictures kind of suck.  We ate after dark and our hobbit hole apartment doesn’t get much light so yeah.  But the meal was really great, we had a Celebration Roast (gross hot, yummy cold as leftovers), stuffing, mashed sweet potatoes with cilantro and coconut milk, sparkling cider, and pumpkin pie (which was so good we didn’t even get to take a picture the next day).

Bran-tatic Muffins November 18, 2008

It’s really hard to find a healthy-ish muffin recipe that doesn’t taste all cardboardy and well, healthy.  But this one from The Joy of Vegan Baking is awesome!  They’re moist and sweet and actually filling which is nice.  Of course, I made some changes to the recipe, I added cinnamon, vanilla, and some millet for a nice crunch.  We were also short on the bran so it only has 1 cup instead of the 1 1/2 it calls for.

I also cut the recipe in half because we don’t have two muffin tins, although I guess I could have made some mini-muffins.  But I’ll definitely be making these babies again!

Spicy Black Bean Soup, its not just for pot lucks any more! November 16, 2008

Kala and I have been together for almost 3 years now, and over this time together I have slowly brought out most of my killer dishes, tonight’s dinner, spicy black bean soup, has been a pot luck favorite for quite some time, I even traded it for a deal on my old Bianchi mountain bike when I first moved up here. I should have made it for her much sooner!  Although the recipe is in reserve for the cookbook, the basics of it are a bunch of dried beans, onion, garlic, green pepper and a secret blend of spices (the go to spice is unsweetened cacao powder). It’s a hearty soup and we had it with a little tofutti sour cream and green onions. It was very filling! It also has great second day uses as a dip, taco/burrito filling and the like.

Since we are lazy vegans and having no desire to cook tonight after my  long hours at work and venturing out of the apartment for much of the day, we opted for Pizza Luce. Kala ordered the old stand by, the Mock Muffeletta and I opted for the Spaghetti since i had been craving pasta for a few days. Luce is more than willing to veganize the dish with veggie balls instead of meat and omitting the cheese, it also includes a little bit of garlic toast. I have had it a few times prior, and its usually a little better dine in but the delivery version is good too.  The sauce is good and garlicky but not overpowering, and the veggie balls are tasty and have a nice texture.  The pasta craving was very much satisfied.
