Banh Mi

Well tonight for supper I made one of my favorite sandwiches: the banh mi, aka the Vietnamese hoagie.  I was fairly happy although the bread could have been a little fresher, it felt like it was a day or two past prime. The filling of the banh mi is a pickle made with daikon radish, carrots, some sauteed mock duck, cilantro, sliced jalapeno pepper, Sriracha sauce and Vegenaise.

With the exception of the bread I was fairly happy with dinner, Kala, not so much.  She thought the pickle smelled like a dirty diaper and did not taste any better.  As far as my view, it’s a sweet vinegar pickle and its a little earthy but tasty. The main change I might make is actually cutting the veggies into match sticks as opposed to shredding them with the food processor to get a bit of a crunch.
